Timpana/Timpano/Timballo (I can’t figure out which is the right word!), an Italian dish, is basically everything that is good in this world. Coming from Sicily and Malta, this recipe can feed an army. It is literally a pasta pie. The pie crust is pasta. The inside is layers of more pasta with all the goodness that you put into pasta. When served, it’s served in slices. Everything that can be homemade is homemade. Pasta, meatballs, sauce…everything homemade. So much delicious goodness!
We used Binging with Babish’s recipe from Youtube. Babish is my new favorite Youtube person. He recreates dishes from movies and TV shows, such as Rachel Green’s English Trifle from Friends, Kevin’s Chili from The Office, or Dessert Breakfast Pasta from Elf. He also does recipes that are not based on television, but these are more fun!
Babish’s inspiration for this dish was the movie Big Night. I can’t tell you how many times we watched this video. We wanted to get everything just right! Dr. GP made the pasta, our friend made the sauce and meatballs, and I brought the greens and wine.
Paired with the Timpana is a 2016 Barone Fini Pinot Grigio and 2013 90+ Cellars Chianti Riserva. Normally, I do not like Italian Pinot Grigio. To me, it is too light and lacking flavor. Not this one. Barone Fini’s Pinot Grigio is full of floral and stone fruit flavors with nice minerality. On top of that, it’s only $11. Quite a fantastic wine for the price! The Chianti Riserva, only $12, is also a steal. Full of Cherries, Potpourri, and vanilla, this Chianti has a slight bite, but smooth finish.
Everything about this pairing was 5 grapes. It took a long time to make, but it was all so worth it! Dr. GP got to experiment with making pasta, we got to enjoy a fabulous meal with friends, we drank some good wine, and had an amazing night. All in all, it took about 24 hours to make.
